Honey pork ribs with roasted potatoes

This dish is insanely easy and what’s best, it’s cooked entirely in the oven so there’s little mess in the kitchen that usually comes with Chinese stir-frying. Definitely a reprieve from all that sweating I did in the kitchen the past few meals. They really should make better ventilated kitchens in HDB flats.

Honey Pork Ribs

Ingredients:

500g pork ribs
1tbsp finely chopped pineapples
3 tbsp honey
2 cloves chopped garlic
1 tbsp dried oregano
1/2 tsp salt
2 tbsp olive oil
2 tbsp Chinese wine
2 tbsp light soya sauce
1 tsp dark soya sauce

Instructions:
Marinate the pork ribs together with all the ingredients for 4-6 hours.
Preheat oven to 180C, place pork ribs onto tray and roast for 10-15 minutes.

Roasted Potatoes

Instructions:
4-5 unpeeled potatoes, cut into small chunks.
drizzle oil, salt and pepper and some dried mixed herbs (optional) and toss it around in a bowl. I felt like Jamie Oliver when I did this. He loves to cook his vegetables with his hands.

Lay the potatoes on the tray and roast for 40 mins. You can roast it with the ribs but it takes a little longer than meat. Pierce the potatoes with a fork to check if it’s cooked.

Butter Garlic Prawns

Instructions:
1 bulb of garlic, chopped
Butter
12 Tiger Prawns

Fry garlic with butter until fragrant. Stir-fry prawns in until orange.
